A hotel built by hand

The Coral Hue started as a tired 1970s motel on Hastings Street. Hannah and Patrick Doyle bought it in 2015, spent a year renovating, and opened with twelve rooms in 2016. Ten years later it's a 28-room boutique hotel — but the approach hasn't changed.

Patrick built the reception desk, the rooftop bar, and most of the furniture. Mia sources from farms within an hour's drive. Liam knows the regulars by name. It's a small team, and they've been here for years.

The hotel is a five-minute walk from Noosa Main Beach, and a minute from the national park entrance. The rooftop has a pool, a bar, and a view that makes first-time guests stop talking for a moment. It's a small thing, but it matters.

Hannah Doyle has worked in hospitality for twenty years — from a front desk role in a Sydney hotel to managing resorts in the Whitsundays. In 2016 she co-founded The Coral Hue Hotel with her husband Patrick, turning a rundown motel on Hastings Street into a 28-room boutique hotel. Hannah oversees the day-to-day, the team, and the guest experience. She lives a block from the hotel and knows every regular by name.

Patrick handles the building, the books, and the renovations. A former carpenter turned hotelier, he built much of the hotel's interior himself — the reception desk, the rooftop bar, and most of the furniture in the suites.

Mia Tanaka, Head Chef

Mia Tanaka

Head Chef

Mia runs the restaurant and the breakfast service. She grew up on the Sunshine Coast and sources from local farms, fishers, and bakeries. Her menu changes with the seasons — reef fish in summer, slow-cooked lamb in winter.

Liam O'Connor, Front Office Manager

Liam O'Connor

Front Office Manager

Liam has been at The Coral Hue since 2019. He knows the best surf breaks, the quietest walking tracks, and which room to put you in if you want to sleep in. Ask him about the sunrise — he'll tell you which balcony to watch it from.
